To make Malpua batter:

  • Khoya (Mawa): 1 cup (about 200 grams)
  • Fine flour: ½ cup
  • Semolina (Rava): 2 tbsp
  • Milk: 1 cup (or as per requirement)
  • Fennel Powder: 1 tbsp
  • Green Cardamom Powder: ½ tsp
  • Sugar: 1 tbsp (for batter only)
  • baking powder: just a pinch
  • Ghee: to fry

To make syrup:

  • Sugar: 1 cup
  • Water: ½ cup
  • Saffron threads: 8-10 (if desired)
  • Green Cardamom Powder: ½ tsp

To decorate (garnish):

  • finely chopped pistachios and almonds
  • Silver work (if desired)

The easiest method to make

Step 1: Prepare the solution

First of all, take khoya (mawa) in a big bowl and mash it well with your hands, so that there are no lumps in it. Now add flour, semolina, fennel powder, cardamom powder, a pinch of baking powder and milk and mix well.

An important tip: The batter should be such that it falls easily from the spoon, just like the batter for pakodas – neither too thick, nor too thin. Now cover it and let it rest for 15-20 minutes. With this the semolina will swell well and your Malpuas will become very soft.

Step 2: Make the syrup

While the solution is resting, we make the syrup. Put 1 cup sugar and half cup water in a pan and let it cook on low flame. When the sugar dissolves completely and the syrup starts becoming slightly thick, add cardamom powder and saffron threads to it.

Remember: All we need is a slightly sticky, one string syrup. It should not be made too thick. Now turn off the gas and let the syrup remain slightly warm.

Step 3: Fry the Malpuas

Now take a wide pan or kadhai and heat ghee in it. Keep the flame medium. When the ghee is properly heated, gently pour the batter into the ghee with the help of a large spoon and let it spread on its own in a round shape. Fry it gently until it turns golden brown on both sides. If fried on high flame, the Malpuas will burn from outside and remain raw from inside.

Step 4: Dip in syrup and decorate

Immediately after frying, take out the Malpua and dip it directly into the lukewarm syrup. Let it remain in the syrup for 1 to 2 minutes so that it absorbs the sweetness properly.

Now take out the Malpua in a plate. Add some chopped almonds and pistachios on top and if desired, also apply silver work.
