But when we think of Rasmalai, only Paneer or Chhena comes to our mind. The specialty of carrot rasmalai is that it is healthier than traditional rasmalai and it has the natural sweetness of carrots.

What will be required? (Material)
For this you do not need to bring much from the market. Fresh red carrots (about half a kilo), one liter of condensed milk, some semolina or rice flour (for binding), sugar to taste, and your favorite dry fruits like almonds, cashews, and pistachios. Keep a few threads of saffron and cardamom powder for fragrance.

Easy way to make (Step-by-Step):

  1. Prepare Creamy Milk (Rabri): First of all, pour milk in a big pan and boil it on medium flame until it thickens to half. Add cardamom powder, saffron and sugar to it. Your thick saffron cream is ready.
  2. Make carrot base: Peel and grate the carrots thoroughly. Now heat some ghee in a pan and fry the carrots until they become soft. When the carrot becomes soft, add some milk and one or two spoons of semolina for binding and dry it slightly, so that balls can be made from it.
  3. Make small rasmalai: When the carrot mixture cools down, apply some ghee on your hands and make small round cakes or balls. Now steam these balls in a little milk on low flame or boil them lightly in milk so that they get cooked deep inside and remain soft.
  4. Confluence and serving: Now put these prepared carrot balls in our thick saffron cream. Leave it for about 10-15 minutes so that the carrot balls absorb all the milk and become absolutely spongy and juicy.
  5. Decoration from above: Garnish with slivers of almonds and pistachios. If you want, eat it hot or keep it in the fridge and serve it cold.

Pro Tip: Keep in mind that do not boil the carrot balls in creamy milk for too long, otherwise they may break. Just dropping it into the milk gently is enough.
