green garlic (chopped) 1 cup
green coriander 1/2 cup
Green chilly 3-4 (as per taste)
Ginger 1 inch piece
Cumin 1 tbsp
lemon juice or curd 1 tablespoon
Salt as per taste
Oil (for tempering – optional) 1 tablespoon

Method of preparation (Step-by-Step Recipe)

Preparation: Clean the green garlic and wash it thoroughly. Use both its white parts and green leaves.

grind: Add chopped green garlic, coriander, chilli, ginger and cumin to the mixer jar.

Sour: Add lemon juice or one spoon fresh curd in it. This helps in keeping the color of the chutney dark green.

Fine paste: Add a little water (if needed) and grind it coarsely or finely.

Tadka (Optional): If you want to give it Rajasthani style, then heat some mustard oil in a pan, add mustard seeds and asafoetida and fry the prepared chutney for 2 minutes. This increases its ‘shelf life’.
