- Step 1 – Peel and wash the potatoes: First of all, wash all the potatoes thoroughly and remove their peel.
- Step 2 – Cutting Thin Chips: Now cut the potatoes into thin slices with the help of a chips cutter (chips making machine). Keep in mind, the thinner the chips are cut, the more crispy they will be. If you don’t have a cutter, you can also cut thin slices with a knife.
- Step 3 – Starch Removal (Most Important Step): Immediately put the chopped chips in icy cold water and leave for 5-10 minutes. Doing this removes all the starch from the potato, which is the most important step in making the chips crispy.
- Step 4 – Drying the Chips: After 10 minutes, take out the chips from the water, spread them on a clean cotton cloth or kitchen towel and dry all the water by pressing gently on top. There should be no moisture at all in the chips.
- Step Five – Fry the Chips: Now heat oil in a pan. When the oil becomes medium hot, add chips little by little. Do not stir the chips as soon as you add them to the pan; let them set for a few seconds.
- Step 6 – Fry till crisp: Fry the chips on low to medium flame until they become golden and crisp. When the chips look light golden and make a sizzling sound, take them out in a plate.
