The festival of Basant Panchami is dedicated to Maa Saraswati, and on this day various bhogs are offered along with worshiping the Goddess. Especially, yellow things are a special part of this day, because it is believed that this color is dear to the Goddess. On this occasion, making yellow sweet rice in homes is a tradition. Material:
- ½ cup basmati rice
- ½ cup sugar
- ½ cup ghee
- 8-10 cashews (half piece chopped)
- 7-8 almonds (chopped)
- 2 teaspoons raisins
- 2 teaspoons dry coconut (grated)
- 2 cardamom
- 4 cloves
- 1 cup of water
- 4 teaspoons saffron
- 4 teaspoons orange food color
Method:
- Prepare rice: First wash the basmati rice thoroughly and soak it for at least 30 minutes.
- Fry nuts: Heat 2 tablespoons of ghee in a large pan. Add cashews, almonds, raisins and dry coconut to it and fry it on low flame till it turns golden brown. After roasting, keep them aside.
- Add color to the water: Add the remaining ghee to the pan and add 2 cardamom and 4 cloves to it. Then add 1 cup of water, saffron and food color. Mix all the things well so that the color mixes well in water.
- Cook rice: Sieve soaked basmati rice water and add it to the color water and mix well. Now cover and cook on medium flame for 10 minutes. When the rice is cooked half, mix gently.
- Add sugar and dry fruits: Then add sugar, 2 tablespoons of ghee and roasted dry fruits. Mix gently so that the sugar melts. Cover and cook on low flame for 5 minutes. Keep stirring the rice in between so that they do not burn from the bottom.
- Serve: When the rice is completely cooked, serve them hot by decorating them with some chopped dry fruits and grated coconut.
