News India Live, Digital Desk: If it is winter season and if there is no hot mustard greens in the plate and corn bread with white butter on top, then winter seems incomplete. Whenever we stop at a dhaba on the highway, this is the first thing we order.

But often we are afraid to make it at home. We think, “Man, this is too much trouble” or “I can’t make round corn bread.” So don’t worry! Today we have brought for you that secret and easy recipe which will give you exactly ‘Pind’ (village) taste. Making it is not as difficult as we think.

Come, let’s go to the kitchen and prepare this wonderful feast.

The secret of real taste: not just mustard

If you think that only mustard is added to this saag, then you are wrong. The secret of real Punjabi saag is in the ‘mix’.

  • Mustard leaves: To give spiciness.
  • spinach: To give dark green color and softness to the greens.
  • Bathua: It gives a creamy texture to the greens and is very nutritious.

(Tip: Keep the ratio 2:1:1. That is, if there is 500 grams of mustard, then take 250 grams of spinach and 250 grams of bathua.)

Step 1: It is important to “chop” the greens.

Cut the greens, wash them and boil them in the cooker. Also add ginger, garlic and green chillies in it.
After boiling the real hard work begins. Instead of grinding it in a mixer, churn it with a churner (wooden mortar). The saag cooked in a mixer turns into a pure paste, whereas the saag cooked in a dhaba is a little coarse.

  • Secret Masala (Alan): While the greens are cooking, add 2 tsp ‘Corn flour’ Please enter. This gives thickness and a sweet taste to the greens.

Step 2: Tadka is the real life

Heat real ghee in a pan. Fry lots of finely chopped garlic, onion and ginger in it. Add asafoetida and red chilli on top. Now add cooked greens to it and let it ‘simmer’ on low flame for 10-15 minutes. The more it ripens, the better the taste.

Step 3: How to make Makki Ki Roti Round?

Making corn bread seems to be the most difficult task because it breaks while rolling. For this, adopt these 2 methods:

  1. Use of hot water: While kneading the dough, take boiling or lukewarm water. This makes the dough flexible.
  2. Polythene Jugaad: Spread a clean polythene on the chakla-belan, place the dough on it and expand it by patting it with your hand or rolling it out gently. The bread will not break at all.

Put the roti on the pan and when it gets roasted from both the sides, crisp it on the gas flame.
