Ingredients to make Beetroot Halwa:

  • Milk: 1.5 cups (full cream milk is better)
  • Sugar: 1/2 cup (can increase or decrease as per taste)
  • Ghee: 2 tbsp
  • Green Cardamom Powder: 1/2 tsp
  • Mawa/Khoya (optional): 2 tbsp (to make halwa rich)
  • Nuts (of your choice): Almonds, cashews, pistachios – 1-2 tablespoons (finely chopped), save some nuts for decoration

How to make Beetroot Halwa (Step-by-Step):

  1. Cook beetroot: Take a heavy bottomed kadai or non-stick pan. Add grated beetroot and milk to it and keep it to cook on low flame.
  2. Boil and thicken: Keep stirring the milk so that it does not stick to the bottom. When the milk starts boiling and the beetroot gradually absorbs the milk and the mixture starts thickening, reduce the flame to medium. Cook it until the milk almost dries up and the beetroot becomes soft.
  3. Mix ghee and sugar: When the milk is almost dry, add 2 tablespoons of ghee to it and mix well. Now add sugar also. As soon as sugar is added, the mixture will become a little thin because the sugar will release its water.
  4. Keep cooking: Cook the mixture while stirring continuously until all the water dries up and the halwa starts leaving the sides of the pan.
  5. Mix mawa and dry fruits (optional): At this stage, if you want to add mawa, then add it, mix well and cook for 2-3 more minutes. Now add half chopped dry fruits (of your choice) and green cardamom powder and mix well.
  6. Serve: Take out the hot beetroot halwa in a serving bowl. Garnish with remaining chopped nuts and serve hot!

Some important tips:

  • Cook the halwa patiently on low flame so that it tastes good and does not burn.
  • If you eat less sweets, then adjust the amount of sugar as per your requirement.
  • If mawa or khoya is not available, milk cream can also be used.
