News India Live, Digital Desk: Mexican burrito is a ‘hand-held’ meal that children can easily eat even on the go. The ‘Mexican rice’ and ‘cheese filling’ used in it makes it a complete meal.

Ingredients:

For Burrito Wrap: 2 large chapattis or tortillas.

For filling: 200 grams paneer (cut into cubes), boiled kidney beans, cooked rice.

Vegetables: Finely chopped onion, capsicum, tomato and sweet corn.

Sauces and Spices: Tomato ketchup, mayonnaise, Mexican seasoning (oregano/chili flakes), black pepper and salt.

For garnish: Grated cheese and fine coriander.

Method of preparation (Step-by-Step Recipe):

Step 1: Toss the cheese and vegetables Heat some oil or butter in a pan. Add chopped onion, capsicum and corn to it. After lightly frying, add paneer cubes and boiled kidney beans. Add salt, pepper and Mexican seasoning on top and cook for 2 minutes.

Step 2: Prepare Mexican Rice Add a little tomato sauce and oregano to leftover or freshly cooked rice and fry it lightly. This gives the burrito an authentic Mexican taste.

Step 3: Assemble the Burrito Now take a chapatti or tortilla. First apply a layer of mayonnaise in the middle. Spread prepared rice over it and then place the cheese-vegetable mixture. Top with lots of cheese and coriander.

Step 4: Roll and Bake Fold the chapatti from both the sides and make a roll. Now apply a little butter on a pan and fry the burrito until it becomes golden and crisp from both sides.

Special tips for moms:

Healthy Twist: Instead of flour tortilla, you can also use homemade wheat bread.

Hide Vegetables: If children do not eat vegetables, you can chop them finely and mash them well with cheese.

Serving: Serve it with sweet-sour chutney or salsa.
