Chana Churmur or Salted Sev: half cup

Black gram (boiled): 2 tbsp (optional)

Green Coriander: finely chopped

Lemon Juice: 1 tablespoon

Secret of real Bengali taste: ‘Masala and oil’

The real taste of Jhalmudi lies in two things:

Mustard Oil: 1-2 teaspoons (use raw oil only).

Pickle Masala: 1 teaspoon (masala or oil of mango or chilli pickle).

Jhalmudi Masala: Black salt, roasted cumin powder, red chilli powder and a little chaat masala.

Method of preparation (Step-by-Step Recipe)

step 1: First of all, take puffed rice in a big bowl. If puffed rice has become soft, heat it lightly in a pan so that it becomes crisp.

Step 2: Now add chopped boiled potatoes, onions, tomatoes, green chillies and boiled gram.

Step 3: Add roasted peanuts and salty sev (bhujiya) to it.

Step 4: Now add black salt, roasted cumin, red chilli powder and most importantly-Mustard oil and pickle masala Enter.

Step 5: Finally add lemon juice and green coriander and toss everything well or mix it with a spoon.

Serving Suggestion

Serve Jhalmuri immediately after making it, otherwise the puffed rice may become soggy. To get the real feel of Kolkata, serve it in a paper cone (Thonga) sprinkled with a little salt on top.
