  • Oats (ground): ½ cup
  • Semolina: ¼ cup
  • Celery: 1 tsp
  • Kasuri Methi: 1 tablespoon (crushed with hands)
  • Salt: as per taste
  • Oil/Ghee (for moyan): ¼ cup (heated)
  • Water: to knead the dough
  • Oil: for frying

How to make (Instructions):

  1. Prepare the dough: In a large bowl, add wheat flour, ground oats, semolina, celery, kasuri methi and salt and mix well.
  2. Enter Moyan: Now add hot oil or ghee (for kneading) into it and mix the dough well with your fingers, so that the oil/ghee gets mixed well in the entire dough and the dough starts forming a fist. It makes matari crispy.
  3. Knead the dough: Knead a hard and soft dough by gradually adding water. The dough should not be too wet. Cover the dough and keep it aside for 15-20 minutes so that it sets.
  4. Make matari: Make small balls from the dough. Flatten them a bit by pressing them with your palms or roll them lightly and give them the shape of peas. Do not keep the peas too thick or thin. Make a few holes in each pea with a fork, so that it does not swell while frying and becomes crispy.
  5. Fry: Heat oil in a pan on medium flame. When the oil is hot, fry the peas on low to medium flame until they turn golden brown. Fry them well from both the sides so that they become crispy from inside.
  6. Remove: Take out the fried peas and keep them on tissue paper to remove excess oil.

Serving Method:
Serve hot crispy matris with mint chutney, coriander chutney, tamarind chutney or any dip sauce of your choice. You can also give it as a snack with tea.
