
News India Live, Digital Desk: Gourd pudding, Also known as Dudhi Halwa, is a delicious and rich dessert that beauty of taste, texture and nutrition beauty. This sweet dish made of grated gourd, full-cream milk, khoya and nuts is traditionally preferred, which is often made on festivals, ceremonies and special occasions.
Although gourd is usually used in salty dishes, its light taste makes it an ideal material for sweets such as pudding and barfi.
It is gradually cooked in easy and delicious pudding desi ghee, making the material together creamy, aromatic and delicious sweets. Mixing cardamom, sugar and dry fruits increases its taste, making it a great dessert for people of all age groups.

Material
- Gourd – 1 medium size
- Desi Ghee – 2 tablespoons
- Full Cream Milk – 1 liter
- Cardamom Powder – ½ tsp
- Sugar – 4 tablespoons (as per taste)
- Khoya (grated) – ½ cup
- Sliced fruits (almonds, cashews, pistachios, raisins) – a fist
Method
Step 1: Preparing gourd
Peel the gourd and cut it into large pieces. Remove the soft, seed part from the middle and throw it out, as it can spoil the taste of the halwa. Using a thick grapes, grate the gourd and keep it aside. It is necessary to grate it quickly to prevent colors from deteriorating and maintain freshness.
Step 2: Gourd cooking
Heat a heavy bottom pan on medium heat and add 2 tablespoons of desi ghee to it. When the ghee melts, add grated gourd immediately and start frying on low flame. Cooking it slowly in ghee removes excess moisture and increases its fragrance and taste. Cook for 5 minutes while stirring continuously until it becomes a little soft.
Step 3: Milk and cardamom mix
Add 1 liter full-cream milk and add half a teaspoon of cardamom powder to it. Stir well and let the mixture boil lightly. When it starts boiling, slow down the heat and let it cook for about 10 minutes. Keep stirring in between to prevent the milk from sticking to the bottom of the pan. Gourd will absorb milk, making the pudding thick and creamy.
Step 4: Sweet Halwa
Add 4 tablespoons sugar and mix well. Keep cooking on a low flame, stir in between, until the milk is very low and does not thicken. This step allows Halwa to develop sweet and delicious textures naturally. You can adjust the amount of sugar as per your choice.
Step 5: Khoya for creamy texture
When the mixture becomes thick, add half a cup of grated khoya. Stir well and cook for 5 minutes. Khoya Halwa enhances the prosperity and depth of taste, giving it a magnificent, melting taste in the mouth.
Step 6: Serve decorated with dry fruits
Finally, add a handful of chopped fruits, cashews, pistachios and raisins to bring additional crispness and walnut -like taste. Mix everything well and cook for another minute.
Remove the gourd pudding from the heat and serve it hot.
Tips to make gourd pudding:
- Choose fresh gourd – Choose solid, soft and light green gourd that does not have too much seed, as the taste of more ripe gourd can be bitter.
- Use full-cream milk-This ensures thickness and creamy stability of pudding.
- Cook on low heat – Cook on low flame increases the taste and prevents burning.
