How to prepare Crispy Lachha Paratha with Paratha Masala
After the masala is ready, now comes the turn to give a great texture and twist to the paratha. The method of making it is very simple:
First of all, knead the same normal wheat flour for paratha as you use for everyday parathas. Now take a ball of dough and roll it thinly into a round shape. Apply some desi ghee or refined oil on the rolled roti and then sprinkle the prepared paratha masala all over it.
If you want, you can bake it by folding it into a triangular or square shape. But if you want a dhaba or restaurant style look, then cut this roti into thin long strips with the help of a knife. Then fold these cut strips one above the other and again give them the shape of a round ball.
Seasoning with nigella seeds and coriander and then roasting on pan.
Now stick some nigella seeds (mangrela) and finely chopped green coriander leaves on top of this spicy dough. After this, with the help of a rolling pin, gently roll it again into a round shape.
Now heat the pan, turn the paratha from both the sides and apply desi ghee or oil and cook it well on medium flame till it becomes golden and crispy. Here, your hot, layered spicy Lachha Paratha is ready. Its aroma is so wonderful that your appetite will double. Serve it with hot tea or curd.
