News India Live, Digital Desk: The combination of paneer and potatoes is always a hit, but Aloo Nazakat Takes it to a different level. Actually this is a classy and tasty version of Stuffed Potatoes. It is often served as an appetizer in big hotels, but believe me, it is equally easy to make at home. Let’s see its simple step-by-step recipe.

What is needed first? (Material)

  • 4-5 big sized boiled potatoes (potatoes should not be too soft)
  • ½ cup grated cheese
  • Some cashews and raisins (finely chopped)
  • Green chilli (if children like spicy) and a little ginger
  • finely chopped coriander
  • A little cornflour (to make it crispy)
  • Spices: Salt, chaat masala, roasted cumin and a pinch of garam masala

Easy way to make: Like grandma or grandmother explains.

  1. Giving ‘delicacy’ to potatoes: Cut the boiled potatoes into two pieces from the middle. Now with the help of a small spoon, slowly scrape out the middle part of the potato (Scope out). The potatoes should look like a bowl or boat. Just be careful not to break the edges. Do not throw away the potatoes that you have taken out, we will use them in the stuffing.
  2. Prepare the awesome stuffing: Mix grated cheese, remaining potato, finely chopped dry fruits, ginger, salt and chaat masala in a vessel. According to the taste of children, you can also add a little mozzarella cheese to it.
  3. Stuff the Potatoes: Now fill this mixture well in those empty potato scoops. After filling, apply a little cornflour on the upper part of the potato, so that the stuffing does not come out.
  4. Make it golden and crispy: Now take some oil in a kadhai or non-stick pan. Shallow fry the potatoes on low flame until they turn golden. You can also ‘bake’ them in the oven if you want a slightly healthier option.
  5. Turn to serve: When the potatoes become golden and crispy from above, take them out. Sprinkle some chaat masala and green coriander on top.

Feed it to children with mint chutney or tomato ketchup. The whiteness of the cheese and the crispiness of the potatoes will be no less than a treat for children.

Expert Tip: While boiling potatoes, add some salt to the water and cook only 80%, this helps in maintaining the shape of the potatoes and preventing them from breaking while frying.
