- Flour- 750 grams
- Oil for mouth – 4 tbsp
- Boiled potatoes – 1 kg
- Boiled peas – half bowl
- Green chilli paste – 3 tbsp
- Ginger powder- 1 tbsp
- salt as required
- Dry mango powder- 2 tbsp
- Garam masala- 2.5 tsp

– Take flour in a bowl and add oil to it and mix everything well. Then slowly add water into it and knead the dough. Do not keep the dough too loose or too tight. – After the dough is set, cover it and keep it aside for 15 minutes. Then take 1 kg boiled potatoes in a big vessel and mash it. – Then add half a bowl of boiled peas to it. Now add 3 spoons of green chilli paste, 1 spoon of ground ginger, salt as required, 2 spoons of mango powder and 2.5 spoons of garam masala and mix everything well. The stuffing of Ghugra is ready. – Now make oval rotis for Ghugra. – Then add 1-1.5 spoons of stuffing in the roti and close the hole with water. After sealing, take small pieces. Similarly, weave all the remaining balls. Heat oil in a pan. – When the oil is hot, fry it until it turns golden brown. When all the Ghugras are fried, make a hole in the middle and add one spoon of date-tamarind chutney, one spoon of green chutney, garlic chutney, pomegranate seeds, masala pods, coriander and onion and sprinkle fine sev on top and serve.
