Ingredients for making brinjal stuffing
- big brinjal
- 1 tomato
- 5 finely chopped garlic
- 2 finely chopped green chillies
- 1 finely chopped onion
- 1 teaspoon red chili powder
- 1 teaspoon chopped coriander
- 1 teaspoon garam masala
- 1 teaspoon turmeric
- mustard oil
- salt to taste
How to make Baingan Bhartha
- – First of all, wash the brinjal with water and cut it into two parts.
- – Now fry the brinjal on low flame.
- Tomatoes can also be roasted along with brinjal.
- To fry it, cut it into two parts and fry it on medium flame.
- While the brinjal and tomatoes are roasting, finely chop the onion, coriander, garlic and chilli.
- When the brinjal is roasted well, keep it in a vessel.
- When the brinjal and tomatoes cool down, peel them and remove the burnt parts.
- – Now mash the cooked brinjal and tomato well in a bowl.
- Once mashed, add finely chopped onion, garlic, chilli, red chilli powder and garam masala and mix well.
- Finally add half spoon mustard oil and salt as per taste in the bharta.
- Garnish with coriander over the filling.
