Ingredients to make Stuffed Brinjal:
Big brinjal, finely chopped onion- 1, finely chopped green chilli- 3, finely chopped garlic- 2, tomato- 1, turmeric- 1 teaspoon, red chilli powder- 1 teaspoon, garam masala- 1 teaspoon, chopped coriander- 1 teaspoon mustard oil, salt as per taste

To make stuffed brinjal, first wash the brinjal with clean water and cut it into long pieces. – Now turn on the gas and place a pan on it and add 2 tablespoons mustard oil. – When the oil is hot, add chopped brinjal to it and cover it with a plate. While the brinjal is cooking, you can finely chop the onion, coriander, garlic and chilli. When the brinjal is cooked well, take it out from the pan and keep it in a plate.
– Now in the next step, cut the tomato into two parts, add 1 tablespoon oil in the pan and fry it well. – When the tomatoes are roasted well, turn off the gas. – Now take out the cooked brinjal in a bowl and mash it well. When the brinjal is mashed, add finely chopped onion, garlic and chilli, 1 teaspoon red chilli powder, 1 teaspoon garam masala and fried tomatoes and mix well. Now after this add half spoon mustard oil and salt as per taste. Garnish with coriander on top.
