Material:
Pumpkin – 1 kilogram
Desi Ghee – 4 tbsp
Sugar – 250 grams
Khoya – 250 grams
Almonds – 12 (chopped)
Cashews – 12 (chopped)
Cardamom – 6 (ground)
Pistachios – 1 tbsp (finely chopped)

First of all, wash the pumpkin, peel it, remove the seeds and grate it.
Heat ghee in a deep pan and add grated pumpkin into it. – Cover and let it cook on medium flame.
Keep stirring occasionally until the pumpkin becomes soft.
Add powdered sugar to the pumpkin and continue cooking while stirring.
After some time you will see that a lot of water is coming out from the pumpkin.
At this time, keep stirring the pumpkin with a spoon, take care that the pumpkin does not stick to the bottom of the pan.
Keep stirring it until all the water evaporates and the pumpkin mixture becomes thick.
– Now add remaining ghee in it and keep frying until the pumpkin is cooked well.
– Then add khoya and chopped dry fruits to the mixture. stir well.
Cook until the mixture becomes thick enough to give the shape of barfi.
Touch with your fingers to check whether the mixture is ready or not. If it forms a thread-like structure, it's done.
Add cardamom powder, mix well and turn off the flame.
– Grease a big plate with ghee and put the prepared mixture in it.
Let it cool for a while until it sets. After this, with the help of a knife, cut it into the desired shape of barfi.
