In Rajasthan, millet roti is often eaten with garlic and red chilli chutney. Also, the taste of chutney doubles when eaten with pakodas, parathas and puris. Different types of chutney are made in different states of India. Here we are going to tell you the recipe of garlic red chutney, which you can make and store in your fridge for 1 month.
Ingredients for Garlic Chutney:
Kashmiri red chilli – 6
Red hot chilli – 5
Garlic cloves – 20-25 (finely chopped)
Peanut oil or ghee – 4 tbsp
Lemon juice – half teaspoon
Salt – as per taste
Water – 1 cup
Method to make Garlic Chutney:
To make spicy and delicious garlic and red chilli chutney, which is often eaten with bajra roti, gram flour roti and Rajasthani dal baati. Start by adding Kashmiri red chillies and spicy red chillies in a deep steel container. – Add one cup of water in it and cook on medium flame till it boils. – Once it starts boiling, turn off the gas and let it cool down. Then put the chillies in a blender and make a smooth paste. – Now heat peanut oil in a pan and add finely chopped garlic to it. – After the oil is hot, cook for 30 seconds. Then add chilli paste to it and cook for 5 minutes while stirring. Finally, turn off the flame and add salt and lemon juice. Your chutney is ready. You can store it in a glass bottle in the refrigerator for up to 1 month.
