Kesar Pista Phirni is a special sweet which is very much liked on occasions and festivals. This sweet originating from Awadh is known for its delicious taste. This recipe is relatively easy to make and requires basic ingredients like rice, milk and sugar. Adding saffron enhances its taste and some people also add dry fruits like cashews and almonds to it. Garnished with pistachios and dry rose petals, you will definitely like this sweet whether served hot or cold.
Material:
Creamy milk: 1.5 cups
Rice (ground): 2 tbsp
Sugar: 1/2 cup
Saffron: 1 gram
Pistachios: 30 grams
Cardamom Powder: 1/2 tsp
Rose water: 1/2 tbsp
Dry rose petals: 2 teaspoons

– First of all, soak the rice in water for about two hours.
– Take a heavy bottom pan, keep it on medium flame and pour milk into it.
– Meanwhile, filter the soaked rice and grind it lightly. Add ground rice to boiling milk.
– Keep stirring the rice in milk until it becomes soft and cooked well.
Peel the pistachios and chop them finely.
Add sugar to the phirni and mix well. Then add saffron, cardamom powder and rose water to it.
– Stir the mixture well until it becomes thick.
Once done, turn off the flame and let the phirni cool down.
If you prefer to serve hot, you can serve the phirni directly. For a cold version, pour it into a large bowl and refrigerate until chilled.
Once cooled, garnish the phirni with pistachios and dry rose petals.
