Material
-1 liter full cream milk
-1/2 cup grated coconut
-1/2 cup khoya
- Sugar to taste
– Cashews, cardamom, chopped almonds and pistachios - a little saffron
- Rose petals (for garnish)
How to make Coconut Rabdi
- To make Coconut Rabdi, first soak 10-15 cashews in hot water in a small bowl and keep it aside for 15 minutes.
- – After this, pour full cream milk in a pan and heat it till it boils.
- – After this, reduce the flame of the gas and keep cooking the milk till its quantity reduces by 3/4.
- While doing this, keep stirring the milk to prevent it from burning.
- – Now add saffron and khoya to the milk and keep stirring for a while.
- – When the milk starts sticking to the sides of the pan, remove it.
- – Now grind the soaked cashews in a mixer and make a paste.
- – Now add sugar and grated coconut to this mixture and stir well until the milk starts thickening.
- Now add cashew paste to it and keep cooking till its rawness goes away.
- – Now add cardamom powder to the mixture and mix well.
- Remove the Rabidi from the flame and let it cool.
- Your delicious coconut rabri is ready.
- Transfer it to a serving bowl and garnish with rose petals and chopped almonds.
