In this study, data of more than 4 lakh people around the world was analyzed. However, this research also revealed that the risk of diabetes from eating eggs is not the same everywhere. This risk is greatest in countries where processed meats and refined carbohydrates are consumed with eggs. In western countries, these things are eaten with eggs and in these countries eating eggs daily increases the risk of diabetes.

Scientists believe that eggs alone are not responsible for type 2 diabetes. The real problem occurs when things like bacon, sausage, white bread and butter are eaten with eggs. All of these items contain saturated fat and refined sugar, which can increase blood sugar. In contrast, in Asian countries, eggs are often eaten with vegetables, rice or pulses, thereby reducing the harm caused by eggs. Asian people have a much lower risk of getting diabetes from eggs than Western people. It is important to understand that the benefits or harms of eggs depend on what they eat with them.

Now the question is, why does eating eggs increase the risk of diabetes? According to researchers, one large egg contains about 186 milligrams of cholesterol, which may affect insulin sensitivity in some people. If eggs are fried in ghee, butter or oil, or prepared with cheese, they get accumulated excess fat, which can increase blood sugar. The habit of eating processed meat with eggs can also be harmful. Therefore, eggs are not directly harmful, but what matters is their preparation and the things eaten with them.

Now the question is, should we stop eating eggs? Scientists say that there is no harm in eating eggs, because they are nutritious food. They contain high quality protein, vitamin B12, choline and good fats. If you’re healthy, it’s safe to eat 3 to 6 eggs a week, as long as you boil or scramble them without adding too much oil and pair them with fiber-rich foods like vegetables, whole grains or pulses. Doing this is good for your digestion and heart. If you fry eggs in ghee or butter or make a heavy omelette with cheese, it can cause harm.
