Mumbai Style Pani Puri
Grind boiled potatoes and moong/ragda coarsely. Add chopped onions to it. Add salt, cumin powder, dried mango powder, chaat masala, red chili powder and black pepper powder. Serve with spicy coriander-mint water and sweet tamarind-date chutney.
Delhi-Style Golgappa
Mash the boiled potatoes roughly. Add salt, roasted cumin powder, dried mango powder, chaat masala, red chili powder and black salt. Eat with spicy jaljeera-boondi water and sweet tamarind chutney.
Kolkata-Style Puchka
Coarsely mash boiled potatoes and boiled black gram. Then add salt, 1 tablespoon fennel, cumin and coriander seeds, roast and make powder, add chaat masala, crushed green chillies, green coriander, black salt, lemon juice and tamarind water. Can be served with spicy mint-coriander water and sweet tamarind-jaggery water.

To make this Pani Puri, make a slightly thick batter by adding 1 cup gram flour, 1/2 teaspoon turmeric powder, 1 teaspoon chili powder, 1 teaspoon coriander powder, a pinch of baking soda and salt as per taste. Cook the phulki by deep frying them in an appe pan on medium flame. Then eat with spiced water.
