Which vegetables are required to make Undhiyu?
- 1 cup Surti Papdi (Flat Beans)
- 1 cup toor
- 1 cup potato (aloo)
- 1 cup coriander
- 1/2 cup ringan
- 1/2 cup tindora
- half cup yam
- Carrot
- 2 raw bananas
- 1 sweet potato
- half cup sugar
- half cup tomato
- ginger-chili paste
- 1 cup handful fenugreek seeds
What spices are required to make Undhiyu?
- Oil
- Cumin
- Asafoetida

- salt to taste
- Garlic
- 1 inch ginger, grated
- 2 teaspoons chopped coriander
- 2 teaspoon sugar
How to make Undhiyu?
- Wash all the vegetables thoroughly and cut them into medium sized pieces.
- Heat oil in a large pan, add cumin, asafoetida, parsley and green coriander.
- Add garlic, ginger, turmeric powder, red chilli powder and garam masala powder, all the ingredients mentioned above.
- Mix well, then add all the vegetables. Add fenugreek seeds.
- – Add salt and 1 cup water and cover and cook until the vegetables become soft. You can add garam masala and egg jaggery here. You can also use some green food coloring. So that the color of the vegetable looks good.
