If you have kids at home who refuse to eat vegetables, you may struggle to find recipes to put in their lunch boxes. Although kids may not like vegetables, adding paneer masala to it enhances the taste and nutritional value of the recipe.

Today, we have brought some such Paneer recipes for your children in which you can give them nutrition along with taste.

Paneer Kathi Rolls

400 gms paneer (cottage cheese), cut into strips

4 wheat flour chapattis

8-10 onion rings

1 green chilli chopped

1 tablespoon vinegar

1 tablespoon oil

1 medium onion chopped

1 medium chopped tomato

½ tsp ginger-garlic paste

½ tsp red chilli powder

¼ tsp turmeric powder

¼ tsp garam masala powder

3 tablespoons thick yogurt

Mayonnaise as needed

Green chutney as required

Sprinkle chaat masala

Method of preparation

1. Mix chopped onion and green chillies with vinegar and keep it aside.

2. Heat oil in a nonstick pan. Add chopped onion and fry till golden brown. – Add tomatoes and cook till soft.

3. Add ginger garlic paste, red chili powder, turmeric, paneer pieces and fry. Add garam masala powder and curd. Mix well and cook for 2-3 minutes.

4. Take a roti and spread some mayonnaise and green chutney on it.

5. Mix some cheese on the roti and put onion-chilli mixture in the middle. – After this sprinkle chaat masala and make a tight roll.

Cheese nuggets

200 gms Paneer

2 tablespoons of soy sauce

2 tablespoons of red pepper sauce

2 tbsp ginger-garlic paste

Ground black pepper to taste

salt to taste

flour for sprinkling

For coating

Cornflour solution for dipping

Oil for deep frying

Method of preparation

1. Cut paneer into ½ inch cubes.

2. In a bowl, mix soya sauce, chilli sauce, ginger-garlic paste, ground black pepper and salt. Add paneer pieces and mix well.

3. Sprinkle flour over the paneer pieces, wrap and dip in the cornflour solution. Repeat the process once more.

4. Heat oil in a pan. – Fry the paneer pieces until golden brown.

5. Serve hot with sweet chilli sauce.

Paneer cutlet

200 gms Paneer

2-3 medium potatoes, boiled and peeled

1-2 green chillies chopped

2 tablespoons finely chopped fresh coriander leaves

1 medium onion chopped

¼ tsp turmeric powder

½ tsp red chilli powder

1 tsp paneer masala

salt to taste

½ cup fresh bread crumbs

Oil for frying

Green chutney for serving

Method of preparation

1. In a large bowl, combine potatoes, green chillies, coriander seeds, onions, turmeric powder, red chilli powder and paneer masala. – Add salt to it and grate the paneer. Add bread crumbs and mix well.

2. Divide the paneer mixture into equal portions and shape each portion into a cutlet.

3. Heat oil in a pan. Put the prepared cutlets in hot oil. Fry until golden and crispy. Drain on absorbent paper.
