Material
- Watermelon juice – 6 cups
- Ginger (1 inch)
- Water – half a cup
- Sugar – 2 tbsp
- Corn starch – 1 tablespoon
- Rose water – 1 tablespoon
- Red food colour – 1 tablespoon
- Lemon juice – 1 tablespoon
- Coconut juice – half a cup

- To make Watermelon Coconut Barfi, first take out the juice of the watermelon. For this, cut the watermelon into pieces and remove its seeds and grind it in a mixer jar. – Now pour the watermelon juice in a pan with the help of a ladle.
- Pour the watermelon juice into a pan. Put the mixture on low flame. When the mixture becomes frothy, add sugar to it as per taste. Then stir till the sugar dissolves completely.
- – Now make a paste by mixing cornstarch with 5 tablespoons of water in a small bowl. Pour this solution slowly into the boiling watermelon mixture while constantly stirring it so that lumps do not form.
- – Now mix all the ingredients and keep cooking until it thickens. This may take about 5-7 minutes. When the mixture thickens, add rose water, a few drops of vanilla essence and lemon juice to it.
- Cook it till the watermelon mixture thickens, once it thickens, spread it on a tray. Let the mixture cool and keep it in the fridge for at least 6 hours.
- Once frozen, cut the barfi into barfi shapes with the help of a knife. Your watermelon and coconut barfi is ready, which can be stored for many days.
