People reaching the stall of Baghpat in the pavilion of One District One Cuisine are first watching the making of Ghevar and then tasting it. People from Delhi, Gurugram and Ghaziabad loved the crunch of the ghevar and the layer of khoya. It was also a matter of attraction for many people that Ghevar, which is generally considered the sweet of Sawan, is being sold freshly prepared here even in September.
The family of Ishwar Dayal Aggarwal, resident of Aminagar Sarai, Baghpat, has been in the business of making Ghevar for three generations. Deepak Goyal, belonging to this family, is running a stall in the trade show. He told that many people coming here after seeing Ghevar question that this is a sweet available in Sawan, then how is it being prepared at this time. They are told that the demand for Ghevar in Baghpat is not limited to Sawan only. People are also getting information about the availability of Ghevar of Baghpat in different seasons through social media.
Fresh ghevar being prepared in front
Five artisans have come from Baghpat to the trade show. These artisans are preparing fresh ghevar in front of the people at the stall itself. People’s curiosity is also increasing due to this. According to Deepak Goyal, good sales are being made daily and Ghevar is being sold here at the rate of Rs 600 per kg.
Describing the specialty of Ghevar, he said that the use of khoya prepared from pure milk gives a different identity to the taste. Its specialty is the crisp bottom and the layer of frozen khoya on top. Apart from Baghpat, it is in demand in Delhi and many districts of Western Uttar Pradesh.
People who reached the trade show including Sonali from Delhi, Raveena Kashyap from Gurugram and Dharmendra Bhardwaj from Ghaziabad tasted Ghevar. People also stopped at the stall and watched the process of making Ghevar. People appeared excited to see Ghevar being made in a special way. For the first time, famous dishes of all 75 districts of the state have been given a place in the trade show under One District One Cuisine. Ghevar from Baghpat has been included in this. This has given an opportunity to the traditional sweets of the district to reach the people coming from other districts.
