Ingredients for making mango paste
- 1 kg totapuri mango
- 1 teaspoon turmeric powder
- 1 kg granulated sugar
- 1 teaspoon salt
- a pinch of garam masala
- 2 tsp salt kashmiri red chilli powder
- 1 teaspoon cumin powder
Method to make mango paste
- – First of all, wash the Totapuri mangoes thoroughly and dry them thoroughly with the help of a cloth or tissue.
- Grate all the mangoes finely.
- – Now cut all the mangoes equally.
- – Now keep the mangoes in a clean and dry glass bowl or stainless steel vessel.
- – Now add salt and turmeric powder and mix well.
- – Now add powdered sugar to it and mix well.
- Take care that no lumps of sugar are formed.
- – Now cover the bowl with a muslin cloth and tie it very tightly with the help of a thread.
- Keep the drop in it overnight.
- Next morning, keep the Chhunda on the terrace in direct sunlight till evening.
- Bring chunda inside after sunset.
- – Now open the muslin cloth and stir the chundaha well with a clean spoon.
- Now cover it again with muslin cloth and keep it indoors overnight.
- Repeat the process of placing it in the sun once again.
- – Now bring it indoors and keep it for 6-10 days until the syrup becomes thick.
- More material will have to be added after 6-10 days.
- Now add Kashmiri red chilli powder, cumin powder and garam masala and mix well.
- – After mixing, cover it again with muslin cloth and keep it in the sun for 2 hours.
- Now the dots are ready.
- Store it in an airtight glass jar. This will last for 1-2 years.
