Gujarati Kadhi Recipe: Gujarati Kadhi is liked in India and abroad. Gujarati curry is very tasty. Especially the fun of eating Gujarati vegetables with Khichdi is different. So know the easy recipe of sweet and sour Gujarati curry at home.
Ingredients to make Gujarati Curry
- 400 grams curd
- Half cup or one tablespoon gram flour
- 1/4 teaspoon turmeric
- 1 teaspoon jaggery or sugar
- 1/2 tsp fenugreek seeds
- 2-3 tbsp oil
- 2 whole red chillies
- 1/4 tsp red chilli powder or as per taste
- 1/2 tsp mustard seeds
- 2-3 pinch asafoetida
- 1/2 teaspoon cumin
- 1-2 green chillies finely chopped
- 1 inch ginger (long piece grated)
- salt to taste
- 6-7 curry leaves
- 50 grams finely chopped coriander
Note – To make Gujarati curry, curd made from full cream milk should be taken. The more sour, the tastier the curry.
How to make Gujarati curry
- To make Gujarati curry, mix curd and gram flour in a mixer.
- – Now take curd and gram flour in a big vessel.
- – Now add three times more water than curd and mix.
- Curry batter is ready.
- – Heat 2 tablespoons oil in a pan.
- Add cumin, mustard and fenugreek seeds to hot oil and cook on low flame.
- Then add curry leaves, asafoetida, turmeric powder, green chilli and ginger paste and fry.
- – When the spices are roasted well, add curry batter to it.
- Boil the curry on high flame.
- Stir the boiling vegetable with a spoon.
- When the curry starts boiling well, let it cook on low flame for 15 minutes.
- – When the vegetable boils well, add salt and sugar/jaggery to it.
How to decorate Gujarati curry
- Heat oil in a small pan.
- Now prepare the sundae by adding 1/4 teaspoon cumin, whole red chilli and green coriander.
- Sprinkle over the curry and add coriander to garnish.
