Enjoying thandai made from dry fruits on the occasion of Holi has its own pleasure. If ever you get dry fruit thandai on occasion, it becomes even more special. Material:
Full cream milk – 1.5 liters
Sugar – 1/2 cup
Soaked almonds – 20
Cashews – 20
Pistachios – 20
Melon seeds – 3 tbsp
Saffron – 7-8 strands
Poppy seeds – 3 tbsp
Green cardamom – 7-8
Cinnamon stick – 1 piece
Black pepper – 5-6
Dry rose petals – 20
Instruction:
– First of all, take a heavy bottom pan and pour milk into it. Heat it on medium flame.
-While the milk is heating, peel the almonds and grind them with cashews, poppy seeds, pistachios and melon seeds.
-If necessary, while grinding dry fruits, add a little milk and make a smooth paste.
When milk starts boiling in the pan, add saffron threads and sugar in it. mix well.
– Then cook the milk on low flame for 5-6 minutes while stirring occasionally.
-Meanwhile, take dry rose petals, cinnamon sticks, black pepper and green cardamom. Grind them finely and make powder and keep aside.
– Now add dry fruit paste to milk and mix well with a spoon.
– Lower the flame and let the milk boil for at least 5 minutes.
-During this time keep stirring the milk occasionally.
-Finally add the powdered mixture of rose petals and spices to the milk. Mix well and let it cook for another minute.
– Turn off the flame and let the thandai cool to room temperature.
– When the milk cools down, keep it in the refrigerator for half an hour.
-Your dry fruit thandai is ready. Garnish it with some dry rose petals before serving.
