1). Use lukewarm water while kneading the dough

2). Do not make rotis immediately after kneading the dough.

The way to do this is to freeze the roti while it is still slightly warm. Do not freeze very cold bread or very hot bread. Place warm bread in a zip lock bag and freeze.
