On hearing the name of Uttarakhand, scenes of mountains, waterfalls and lush green valleys come to mind. You must have tasted the delicious Maggi available in the mountains, but have you experienced the traditional dishes there? Today we will talk about a special recipe of Uttarakhand, urad dal pakoda. This dumpling is made on every special occasion in Garhwal and Kumaon. It can be served as a starter with hot tea. These pakodas also have religious significance, and are full of taste and health. Once you taste them, you will never forget their taste.
Ingredients required to make urad dal pakoda:
- 1 cup urad dal (soaked in water for about 5 hours)
- 1 inch piece of ginger
- 2-3 green chillies (finely chopped)
- 1 pinch asafoetida
- 1 teaspoon cumin
- Mustard oil or refined oil (for frying)
- salt as per taste
- finely chopped coriander leaves
Method to make Urad Dal Dumplings:
- Grinding the pulses: Coarsely grind the soaked urad dal with ginger and green chillies. Keep in mind that the paste should not be too fine.
- Kneading the paste: Put the lentil paste in a big vessel and beat it well for 10 minutes, so that it becomes light and fluffy. This tip helps in making the pakodas crispy.
- Mixing Ingredients: Now add asafoetida, cumin, salt and finely chopped coriander leaves to the paste and mix well.
- Heating Oil: Heat oil in a pan on medium flame so that the pakodas can be cooked properly from inside.
- Making Pakodas: If you want to make pakodas in Garhwali style, then keeping the paste slightly thick, give it a round shape with the help of light water and make a hole in the middle and fry it after applying sesame seeds. Take care that the pakodas do not stick to each other in the pan.
- Fry Pakodas: Fry the pakodas on medium-low flame until they become golden brown and crisp. After frying, take out the pakodas from the pan and keep them on tissue paper.
Now your delicious urad dal pakodas are ready! Serve them with green chutney and enjoy them with tea or coffee.
