-One cup rice (soaked in water for half an hour)

-Two cups of green peas

-Three green chillies

-One teaspoon cumin

– Two teaspoons of oil

– Two pieces of big cardamom

-6-7 cashews

– Five cloves

– Five black peppers

-two cinnamon sticks

-Three bay leaves

– Two large onions chopped

– Two cups of water

– salt to taste

-Coriander for garnishing

– First of all heat oil in a deep pan. When the oil is hot, add cumin seeds, cloves, black pepper, cinnamon, cashews. – After about half a minute, open the cardamom and add bay leaves and fry well again. – Now add green chillies and onions and fry. Fry the onions till they turn light brown. – Now add green peas and salt and mix well again. – After about two minutes, add green coriander and mix well again. – Now add two cups of water and mix all the ingredients well. When the water starts boiling, wash and add the soaked rice to it. Stir well and cover the pan and let it rise. The water will evaporate in about twenty minutes. – Check whether the rice has swelled properly or not. If it is cooked, turn off the gas and garnish Vatan Pulao with coriander and serve hot.
