Aloo Wadi is a traditional and popular dish of Maharashtra. It is a side dish and is made from potato leaves. This bread filled with potato leaves and spicy chutney is wonderful. Material:
- 8-10 medium sized potato leaves
- Besan – 1 cup
- Rice flour – 2 tablespoons
- Jaggery – 2 tablespoons (grated)
- Tamarind – 1 tbsp (mashed with water)
- Ginger-garlic-green chili paste-2 tablespoons
- Turmeric – 4 teaspoons
- Red chili powder – 1 tsp
- Coriander-Jira Powder-1 teaspoon
- Asafoetida – 1 pinch
- salt to taste
- Oil – to fry
- Coconut and coriander – for decoration
Action:
- To make potato vadi, first wash the potato leaves and dry it, remove the stalk and keep the leaves inverted.
- Make a thick paste by adding gram flour, rice flour, jaggery, tamarind pulp, ginger-garlic-pepper paste, turmeric, chili powder, asafetida, coriander-jeera powder and salt to a bowl.
- Next, you want to wrap your leaves, spread some mixture on a potato leaf, place another leaf over it,
- Apply the mixture again. In this way, add 4-5 leaves and make rolls.
- Wrap this roll tightly with thread.
- Now place an idli vessel on gas and add water to it.
- When the water boils, keep the roll in the mold and cook well for 15-20 minutes in steam.
- When the roll is cooked, take it out and let it cool.
- Cut the roll with a knife only after cooling.
- Fry the prepared pieces in hot oil on medium flame until it becomes crisp well.
- In this way your potato wady is ready.
- Take out the prepared pav in a plate, for decoration you can sprinkle grated coconut on it.
